Due to Covid many of us cannot make it home this year; many families are staying apart for the festive season. We need delicious Christmas treats more than ever! This is why I'm sharing my mom’s simple yet delicious snow roll recipe. It is a traditional Hungarian party cookie, a must-try, that will fill your house with a lovely smell and lots of love!
Just a handful of ingredients are needed and preparation is fast and easy.
INGREDIENTS for 20-22 rolls
(If that’s too much just halve the portions or bake only half of the dough and freeze the other half and bake it another time when a party comes up ).
500g flour
250g margarine
3 teaspoons of sour crème
1/4 teaspoon of salt
1/4 teaspoon of baking soda
1 small pack of vanilla sugar
METHOD
Step 1
Mix flour and margarine in a bowl, knead until margarine is soft. Add the rest of the ingredients and knead until a semi-hard dough forms. This should take around 10 minutes.
Step 2
Cover the bowl and put the dough in the fridge for a minimum of 30 minutes - but it can be longer, even a day.
Step 3
Preheat oven to 350-375°F fan-forced. Grease a large baking tray and line it with baking paper.
Step 4
Roll out the dough on a lightly floured surface until it's about 1/16" thick. Using a drinking cup, cut small circles from the dough. Repeat process by re-rolling and cutting until you finish the dough.
Step 5
Put jam (the traditional recipe calls for plum jam but you can use any kind you like) in the center of the circles and shape them into rolls.
Step 6
Place the rolls an inch apart on the prepared tray. Bake for at least 25 minutes or until they are lightly browned.
Step 7
Roll the rolls wile they warm in the vanilla sugar. Serve and enjoy!
